Q: Is it necessary to peel fresh ginger when cooking with it?

A: The peel isnít harmful to eat; however, it can be tough and bitter. Iím not sure you would want to use it in your stir-fries and other dishes.

Ginger can be difficult to peel. Use a very sharp paring knife or vegetable peeler, or try scraping the skin off with a spoon.

Freezing ginger will keep it fresher longer, and once itís frozen, you might find it easier to peel.
